Chef-Lauren De Rouen
Lulu was born with a passion for cooking instilled by her father with roots from New Orleans and country Basque home-style cooking. She began working in the restaurant industry before she could legally work, stretching pizza dough and knew her passion for culinary was inevitable.
After putting herself through culinary school at the age of 19, she began working as a line cook at the famed Los Angeles restaurant organization, Patina Restaurant Group and apprenticing under some of the most important and influential chefs of this modern day. Chef Lulu quickly rose within the company due to her hard work and determination, into a sous chef soaking up all of the exquisite technique, apprenticing under Master Chef Joachim Splichal personally. With her influence in classic French cooking and her passion blended with unique style, at 24, Lulu De Rouen was the youngest executive chef for the Patina Group when she was handed the reins at Leatherby's Cafe Rouge and the majestic Segerstrom Center For The Arts, in California and along with the highly acclaimed Pinot Provence. Her rave reviews and creative style made her one of the hottest chefs noted as “Hottest Chef Under 30”. She was praised with countless accolades for her ability to master the most revered “risotto” and traveled with the company showcasing her culinary talent at the likes of Pebble Beach Food & Wine, Television Academy’s Emmy’s, and even landing a repeat guest judging spot on Gordon Ramsey’s Hell’s Kitchen. She staged under the great chefs of Lasarte, San Sebastián, Spain and Lorgues, Provence, France with Three Star Michelin Chefs Chez Bruno and Martin Berasategui. After 9 years with Patina, upon returning to the States, she was quickly recruited as opening chef for New York’s Pascal Lorange’s Fig & Olive on Melrose in Los Angeles and then brought on to pave the way for CUCINA enoteca's first venture beyond San Diego in Orange County, California. Lulu’s enthusiasm is contagious with her ability to create the most artistic of plates, focusing on clean living, approachable cuisine and the finest attention to detail. Her interest in the Yachting industry began with a fluke request to join a short venture on a yacht in the Channel Islands, this past August and the next day upon her return, was asked to lead the culinary charge on the Serengetti from Juneau, Alaska to Newport Beach, California. Chef Lulu found this was a natural path to pursue and moved herself to Fort Lauderdale, Florida, and loving her combined passion for travel and cuisine.
Chief Stew Estee Steyn
Estee was raised in the university town of Potchefstroom, South Africa. Never afraid of a challenge, she started lecturing Art History while finishing her post graduate studies in Graphic Design. After nearly 3 years of teaching she returned to graphic design working as an art director at an advertising agency in Cape Town. It is here that she not only became familiar with deadlines, teamwork and pulling the proverbial rabbit from the hat but she also honed her eye for the smaller details crucial for creating successful designs. All these skills and creativity came in handy when she joined the yachting industry 3 years ago. Having worked with Captain Michael before on a highly successful charter yacht, Michael knew she would be a perfect fit for the CAPRICORN charter program. Estee also loves exploring new and old places alike and she will gladly share that great love and point you in the right direction.

Ryan- 1st Mate
On his first trip to the ocean at the young age of 6, Ryan fell in love with the sea and decided that someday he would make it a part of his life. Years went by, and although he was able to make the occasional visit, it wasn’t until he was 19 that he was able to make his dream a reality by joining the US Navy. His time in the Navy had him living in (and falling in love with!) Japan for 4 years, chasing typhoons in the Pacific, and conducting anti-piracy patrols in the Straits of Malacca. Not to mention he once spent 104 days at sea without stepping foot on land….talk about sea legs! After the Navy, Ryan was eager to finish up his degree in Design but the sirens of the seas beckoned yet again – and he found yachting. Ryan has been working onboard yachts for 6 years and there is nothing that makes him happier than him being able to share his love of the sea with the guests! He endeavors to make every guests trip a memorable one and he looks forward to having the privilege of helping to make your trip onboard M/Y Capricorn the trip of a life time!
