DIAMOND GIRL II can accommodate 6 guests in 3 cabins.
The Master cabin has a queen size bed, shower and toilet.
A Guest cabin has a queen size bed, shower and toilet.
A Guest cabin has a double bed, shower and toilet.
All heads are electric.
DIAMOND GIRL II is fully air conditioned through out.
Crew has a separate heads and shower.

DIAMOND GIRL II Crew Profile

Captain Dennis Barbeau and his wife Vicki will be your hosts on the Diamond Girl II.  Beginning with family vacation charters and years of yachting on their own personal sail boat they have thirty years of sailing experience. 

Dennis has a degree in Civil Engineering and owned/operated a construction company.  Following his dream he retired from the construction life, and pursued his love of the sea and sailing.  His first mission was to help sail the Diamond Girl II from Genoa, Italy to the Bahamas.   

An experienced sailor, with a USCG Captain’s license Dennis has sailed for more than 30 years.  His love of sailing and notable sea tales make him the perfect Captain for your adventures.



Vicki has a passion for cooking and entertaining.  She has attended cooking schools in Nashville and trained with Executive Chef Michael Osborne.  Spending the past two years touring and living in the Bahamas, Vicki has learned local Bahamian/Caribbean style cuisine.  She offers freshly prepared Bahamian/Caribbean cuisine and personal family favorites using the freshest produce available.  Special meals for children?  No problem!

DIAMOND GIRL II Menu

Breakfast:

Breakfast burritos filled with eggs, ham/or sausage, potatoes, cheese, and salsa
Eggs (As you like), bacon, sausage, or ham, with hash browns or grits
One-eyed sailor (bread grilled w/egg in the middle) serve w/bacon/ham or sausage
Fish & Grits
Scrambled egg plate with cheese, onions, and ham/sausage.
Eggs Benedict
All breakfast served with:  assorted cereals, seasonal fresh fruit, juice, coffee, tea and bread.
*Omelet options:  cheese, onions, ham, sausage, peppers, tomatoes, mushrooms. 

Lunch

Cheese Burger in Paradise, seasoned oven fries and pineapple baked beans
Shrimp/chicken Quesadillas with caramelized onions, carrot raisin salad
Homemade pizza w/garlic herb crust- toppings of your choice
Italian chopped Salad – (romaine lettuce, provolone cheese, salami, pepperoncini, black olives w/ Italian Dressing) 
Crispy Orange Chicken bowl – (orange glazed chicken served over a bed of white rice) 
B.L.A.T. (Bacon, lettuce, avocado, and tomato) Wrap

Dinner

Grilled Steak (NY strip or rib eye), balsamic roasted new potatoes, steamed broccoli w/cheese sauce, mixed greens salad
Lobster Island style, baked potato, green salad w/apple, candied pecans, Swiss cheese, raspberry vinaigrette
Grilled salmon with honey sauce, garlic pasta, stir fry vegetables
Grilled Maui Maui served over rice, seasoned black beans, and creamy coleslaw
Pan seared teriyaki Tuna served w/wasabi & pickled ginger, sesame green beans, sticky rice, green salad w/Asian dressing
Roasted Duck w/orange sauce, wild rice, steamed mixed vegetables
Marinated Chicken Kabobs, peas and rice, candy kissed carrots

Snacks

Vegetable tray, cheese and cracker tray, fruit and dip tray, ham/turkey/tuna pin wheels, Nachos, Chips N’ dip

 Desserts

Freshly baked cookies, brownies, Key Lime Pie, Ice cream (when available), Mini Apple/pecan pies

My husband and I had a very nice time!  Returning to work this week is tough.  Captain Dennis did an outstanding job navigating the sea.  He provided us with beautiful beaches.  Just what we asked for :)



Vicki provided us with wonderful meals.  She is an accomplished Chef.  My FAV meals were the Lobster Tails, Chicken Marsala, Filet Mignon & Fettucine Alfredo.  Vicki also made meals to accomondate the kids.  This was much appreciated.
