CAPTAIN - GEORGE SARAKOS
Captain George is of Greek nationality born April 7, 1965. He is married and has two children. George speaks English. He holds Certificates and Diplomas for: Skipper Class A, Boatswain, Life Saving and Fire Fighting Appliances, RO/RO Passenger, Ship Security Officer, Tanker Safety. After obtaining all his Certificates, George began his services at sea in 1997 as a sailor on board f/b “Express Olympia”, and f/b “Express Athina”, and as a Bosun on board m/y “Akazu”. Further on he continued as a Captain Class B on board m/y “Wispers”, and from 2008 onwards he served as Captain on board m/y “Reina”, m/y “Lito Mare”, m/y “Waverunner”, m/y “Ilina II”, and m/y “G5”. He is no smoker and during his free time he enjoys soccer, sports and fishing. He has pleasant and extrovert personality and is easily adapted.
CHEF – PAVLOS PAVLAKIS
Chef Pavlos was born January 16, 1979 in Athens, Greece, and he is married. He speaks English and he is familiar with the French terminology. Pavlos attended the Professional Cook School “Palmie”. He has attended seminars on “HACCP”, Molecular Gastronomy, Produits Francais and Fresh Pasta, and he has won the 3rd prize in the Pan-Hellenic Cooking Festival 2005: Mediterranean Cuisine. He is familiar with catering, as well as with desserts. During his work experiences, he was responsible for the creation and execution of an entirely new menu. Moreover, he was in charge of the order of ingredients and the control of the costs and quality. Also, he communicated with ingredients’ suppliers so as to preserve the high quality of the products and to keep the prices at a reasonable lever. Finally, he was responsible for the training of kitchen staff. Pavlos prior to joining m/y “Iris” has worked as Chef B at the “Royal Olympic Cruises”, and at restaurants “Interni” and “Aristera Dexia”. He has worked as Head Chef at the Italian Trattoria “II Doppio”, and as consulting Chef at the Asian restaurant “Moshi-Moshi”. Also, he has worked as Sous Chef at “Pasaji” restaurant, and as Head Chef at “1500” restaurant, as executive Chef at “Join Catering”, and as responsible for the kitchen and pastry chef at the Italian restaurant “Notia”, as Chef at “Omikron” restaurant, as consulting Chef at “Alsos” café, and as Chef on board the m/s “Matina”. During his free time, he enjoys playing the guitar, sports and swimming.
ENGINEER – IOANNIS TSAPIS
Engineer Ioannis was born September 25, 1978 in Chios island in Greece. He is married and has one child. Ioannis attended the Merchant Navy School of Chios, and holds an Engineer class A’ certificate. He also holds ship Security Officer Certificate, Life Saving & Fire Fighting Appliances Certificate, and Tanker Safety Certificate. Ioannis has worked from 1997 to 2000 as apprentice engineer on board motor tankers. For the period of 2001 to 2004 has worked on board motor tankers as 3rd engineer. For the period 2005 to 2009 has worked as 2nd engineer on board motor tankers. During 2010 summer season he worked as engineer on board m/y “Ability”, and for the period April to September 2011 he worked as a chief engineer on board m/t “Minerva Roxanne”. Ioannis speaks English and is a non smoker. During his free time he enjoys swimming, bicycling and fishing.
STEWARD – FILIPPOS TYMVIOS
Steward Filippos was born December 10, 1969 in Lefkosia, Cyprus. He is married and speaks conversational English and intermediate French. Filippos holds all necessary Safety Certificates, Graduated from the IEK “Perantoni’s School” Department of Economy and Administration of Business and Tourism and holds his High School Diploma from the Technical High School of Kaisariani”. Filippos has been working since 1989 for various luxury hotels and restaurants, but in 2003 Filippos brought his training and knowledge to luxury yachts being: m/y “Alexander”, m/y “Amphitrite K”, m/y “Pandora”, m/y “Ouzo Pallas” and today you will find him on board m/y “Iris”. He is extremely hardworking and eager to meet his guest’s demands with the highest standards. During his free time he enjoys listening to music, sports and traveling.

IRIS Accommodations
IRIS can accommodate 10 guests in 4 cabins. The Master cabin has a queen size bed, shower and toilet. 2 Guest cabins have 2 single beds, a pullman, shower and toilet. A VIP cabin has a double bed, shower and toilet. IRIS is fully air conditioned through out. Crew has a separate companionway, heads and shower.
