Blending the best of traditional wooden boat construction with the latest nautical technology and outfitted to the highest standard, Jambalaya, 73ft wooden Schooner, is a perfect combination of Tradition and Comfort. She was built in 2002 in Carriacou and Peter and Sylvie completed a full re-fit at the beginning of 2010 so all the interior design is fresh!
Jambalaya features a magnificent Master Suite, which is light and airy with a king-size bed and a 9ft headroom and has its own personal entrance giving total privacy.
Jambalaya's spacious, classic interior features varnished hardwoods, contrasting pleasantly with the traditionally white-painted decor, making every room light and inviting.
A large covered cockpit is a perfect place for outdoor dining while enjoying the panoramic views. The deck itself is very large and spacious with plenty of room to relax in the shade or sun.
Peter & Sylvie are passionate about providing the best service and exquisite food!

JAMBALAYA Crew Profile
Captain Peter Bennett
Peter, who hails from the UK, bought his first boat at the age of 26. After many adventures sailing the rocky shores of Western Europe, he set off on a five-year circumnavigation of the world relying on his celestial navigation skills to show him the way – this was before the days of GPS technology. Crossing the Atlantic his first land fall was the tropical islands of the West Indies. Peter transited the Panama Canal and sailed on to the South Seas, meeting the rough waters of New Zealand and the calm of Australia's Great Barrier Reef. When all was said and done and thousands of miles had passed beneath his keel the Caribbean kept calling him back.
With his extensive experience, matched with his formal sailing qualifications, Peter considers the Caribbean to be the best holiday sailing location.
Chef Sylvie Bennett
Sylvie, is passionate about providing the best service and is a talented cook. Born in France, she has brought with her many French-cuisine recipes and has adapted them for local products: she will keep you well fed with her French flair for Creole and Caribbean specialties!
Besides her passion for cooking, Sylvie is also a qualified Indian Head masseuse and will be delighted to provide you with a massage on board Jambalaya! Sylvie speaks French, English and Spanish.
JA JAMBALAYA guest comments
Captain's log: The children, 8 year old twins and an 11 year old, loved jumping from the deck into the water, kayaking and whizzing around in the dinghy with the captain! JAMBALAYA has board games such as chess, Battle Ships and Uno, which the children played every day .
The food they particularly liked that Sylvie prepared was pork teryaki brochettes with sautéed potatoes, filet mignon with gratin dauphinois, chicken with sweet potato purée, spaghetti bolognaise...and Sylvie made sure there was lots of ice cream on board!
“Trip was unique, surpassed all my expectations. Great combinations of history, work, learning and pleasure. Never met too nicer and more knowledgeable friends.”
Many many thanks,
“Had a lovely, wonderful time. You two are the best. It is evident in everything you do to make your guests happy!”
Will miss you, a bientot!
February 2013 - One couple, 2 weeks, St. Lucia to Grenada
“We are already missing our fruit and coffee in the morning along with ALL the other fantastic foods. We truly had a wonderful time with the two of you. In addition to the fun sailing, great locations and relaxation, we really enjoyed the nights talking to you before heading off to bed. You and Sylvie were so much fun both Carol and I really had a blast. I feel like we started vacation with two strangers and left with two new friends.

“Fabulous, even better than our first trip on Jambalaya last year. Once onboard, forget your misery, disengage your brain, smell the salt air, feel the movement of the boat. Peter, the Master of sail management, Sylvie, the Master of the kitchen and New Years acrobatics! What a terrific combo! Looking forward already for our return in 2014!”

(The broker) described the boat nicely. In 1993 I was a race crew member of a yacht that won the IYLA World Cup, I've been lucky enough to be onboard some of the finest yachts in the world. Jambalaya is a worthy competitor to every one of them based on type of vessel for the service and the extraordinary attention of the crew.)
When we charter next, we'll be going back to Jambalaya, Peter, & Sylvie. I can't wait to turn on our friends to them.

During our comfortable stay in the spacious cabin, Sylvie pampered us with the most delicious meals and we were shown exciting spots in the Tobago Cays by our warn-hearted hosts, like the island Baradel where we went snorkelling to see big turtles. "We had a marvellous week on Jambalaya where all our dreams of sailing came true. On board, we had from fresh captured tuna to hot Gratin Dauphinois, from fresh fruits for breakfast to French toast... everything we could long for and the excursions on the Islands brought us to tiny little restaurants with typical Caribbean food. It was a wonderful holiday that finished in an evening full of joy and laughter and we hope to come back on Jambalaya one day."

We thoroughly enjoyed our sailing trip to Bequia, Mustique, Union and Mayreau Islands in the Grenadines, meeting some very interesting and entertaining characters along the way! Peter and Sylvie were simply awesome from start to finish, encouraging and teaching us how to sail and catering to our every need. And special mention to Sylvie who is a wizard in the kitchen as well as a helluva masseuse. Thanks again for a great sailing experience in the Grenadines!"
