Ernie Schlobohm, Captain

Captain Ernie just happens to be a true son of a NAVY sailor. He holds a USCG 1600 Ton All Oceans Master and has served as Master on a wide variety of vessels over the last 15 years- from dive boats to fishing vessels to luxury yachts. He has completed charters in not only the entire Caribbean (his true love), but also the Mediterranean. He is a NAUI Scuba Diving Instructor, as well as a skilled pole and spear fisherman and freediver. With Ernie you will not only have a great time, but you’ll feel safe and well taken care of. 

Megan Schlobohm, Chef/First Mate

Megan is a Georgia Girl, who loves gourmet cooking and entertaining guests. After completing her M.S. in Atlanta, GA, she went on to earn a Gourmet Cooking and Catering certification. Since then, Megan has served as chef on both sail and power vessels alongside her husband, and especially loves to cook Thai and Spanish foods. She is fluent in Spanish, and is a NAUI Scuba Diving Instructor as well. Our third crew member, Jeff, is a PADI Dive Instructor, experienced deckhand, and one heck-of-a cocktail mixer.

Chef Megan Schlobohm can't wait to delight you onboard Yacht Lolalita with her love of food and cooking. She prides herself in using the freshest of ingredients and creating healthy, flavorful, unforgettable meals. Every menu is designed for your personal tastes and needs, including vegetarian, vegan, and gluten free.

Here are a few of her gourmet favorites.

Breakfast

·       Served Daily:  coffee and tea; fresh orange and pineapple juices; homemade granola and various cereals; homemade muffins and breads; fresh bagels and cream cheese; fresh-cut island fruits; assorted yogurts; toast and gourmet preserves

Some Specialty Breakfast Items:

·       Tropical French toast stars with a hint of rum, with toasted cinnamon almond slices

·       Omelettes made-to-order with oven roasted herb potatoes

·       Belgian waffles with warm blueberry topping, served with crispy bacon

·       Banana nut pancakes with maple link sausages

·       Local tropical fruit served in a watermelon basket, with fresh muffins and bagels

·       Spinach and mushroom frittata, with smoked salmon on croissants

Lunch

·       Gyro pitas with tomato-yogurt tzaziki sauce, couscous with sautéed sugar snap peas

·       Mandarin chicken salad on fresh wraps with a creamy cucumber salad

·       Tuna Nicoise, with seared Ahi tuna and roasted fingerling potatoes, served on sautéed green beans, with a lemon vinaigrette dressing, capers, and olives

Specialty Cocktails

·       The Lolalitarita - Lime, mint, and cane sugar, muddled with Añejo tequila, with a splash of club soda

·       Hemingway - Coconut water, Gosling's rum, and lime... Simple, cool and refreshing

·       Mama Mary - Made-to-order Bloody Mary's with island peppers and top-shelf vodka

·       Not-So-Urban Cosmo - Vodka, Triple Sec, a splash of mango juice, and cranberry

·       Pum Runch - An assortment of delicious rums, fresh orange-pineapple-mango juice, Coco Lopez, and a Myer's floater

·       Tres Olivas - Chilled top-shelf Vodka with (at least) three blue cheese-stuffed olives.

·       All-Nighter - Fresh-brewed espresso, vodka, Kahlua, Bailey's, and a chocolate garnish.

·       Sake To Me - Silver sake, Grand Marnier, grapefruit juice, and a splash of sweet lime.

Dinner

·       Seared tuna with a mango-cilantro chutney on coconut rice, with a fennel citrus salad

·       Grilled New York strip steak (made with the captain’s special steak rub), served with sautéed asparagus and Yukon Gold baked potatoes

·       Spicy Thai lobster panang with snow peas served on a bed of fragrant jasmine rice

·       Proscuito-and-rosemary-wrapped pork tenderloin with a sweet apple reduction sauce, garlic mashed potatoes, and sautéed zucchini

·       Grilled Sea bass served on couscous with a toasted pistachio vinaigrette

·       Sautéed shrimp on whole wheat linguine with a basil pesto sauce

~ Did you find your Crew Attentive to your needs?

Without a doubt all three of them bent over backwards to keep the two of us and our four legged family member happy!



~ How were your meals – were they well thought out?

Megan is a wiz, especially having to cook out of a galley kitchen.

We requested healthy low fat, low carb meals, lots of fruit and salads.

Her dressings were amazing and her cookies and crème Brule were to die for! Of course we couldn’t always eat healthy!



~ Did they meet or exceed your expectations?

Absolutely



~ What took you by surprise?

The portions, they were immense, but we also are hungry divers and asked for big portions.



~ Were the meals presented tastefully?

Every plate was beautifully presented! I have owned restaurants and have culinary training, and I took pictures of some plates!



~ The bar beverages – was the yacht provisioned the way you requested?

Yes! Everything we requested that they could get on the Island was on board. Not to mention Ernie’s famous banana daiquiris!



~ Did you feel free to help yourself?

Yes, but we never needed to, because they were always there to serve us first.

~ How did you find the comfort of the yacht?

What a beautiful yacht! Everything you could want in a private charter. Especially the Hot water, Air-conditioning and separate shower and bathroom.



~ Cleanliness and Care factor

Boat was in great condition throughout the trip.

~ Your Itinerary –did you feel you participated together with your crew?

Of course weather and wind are the driving factors, but Ernie explained from the beginning what our options were and we were in agreement.

How beautiful the scenery was, how peaceful it is on the water, how sweet and accommodating Megan, Ernie and Jeff were!

Just the peace and quiet and the beauty! The night out with Megan, Ernie and Jeff at Skinny Legs was pretty memorable.
