Chef Karl and Chief Stewardess Stacey, Canadian
They are both from Canada and together give you the best of both French and English hospitality.
Karl is from Quebec City and because of this French background, his specialties are very much European influenced with an American twist. Since graduating pastry and chef school in 2000, Karl has been diversifying his menus by cooking his way through many parts of the world. Chef Karl has taken from his experiences while backpacking, as well as working in mountain lodges or onboard yachts for the past 10 years. Karl thinks this is the best job ever as it keeps him doing what he loves—travelling and cooking.
Stacey is from Cape Breton Island, eastern Nova Scotia, where the sea has always been a part of her life. Stacey attended university for a degree in marine biology in Halifax. With the opportunity to work in some of the city’s finest establishments, she began acquiring the skills, experience, and passion for fine service that she shares with us today. In the summer months Stacey was a naturalist aboard a whale watching boat, where she would eventually be introduced to yachting. Since then she hasn’t looked back and truly enjoys how this industry has found her artistic side while broadening her knowledge of wine, cuisine, and cultures.
For their past 6 years together, Karl and Stacey have discovered a passion for entertaining guests through unique dining experiences. Using creative food and table settings to create memorable dining experiences.
